Beets and Onions as showcase ingredients

Beets and onions can add not only an interesting mix of flavor and texture to your meal; they can also add some much needed nutrients to your vegan diet. Try these intoxicating recipes for your next meal.

Beet and Beansprout Salad with Lemon Garlic Dressing

1 grated lemon rind, 1 cup lemon juice, Olive oil, Salt, Cinnamon or Nutmeg, Minced garlic, 2 medium tomatoes cut into wedges. Nuts – sliced or chopped beet greens (leaves), finely sliced, chopped beets – small cubes, 1 cup beansprouts, washed, Dandelion greens. Prepare the salad and dressing separate then place in the fridge. After an hour toss together, eat immediately, the juice will wilt the salad if allowed to soak too long.

Braised Cauliflower with caramelized onions and Zucchini Pasta

Ingredients: Cauliflower, tablespoons extra-virgin olive oil, cup onion, diced, garlic cloves, peeled and crushed, bay leaves, salt and pepper
Blendedà Stewed tomatoes with red chili powder, salt, pepper, turmeric, garam masala with onions and garlic. Season the cauliflower in the oven with olive oil and spices, then ass the homemade tomato sauce and continue cooking. Serve over zucchini pasta.

Rice with caramelized onions and cubed Beets

Ingredients: Cooked rice, olive oil, salt, and pepper, roasted green chili sauce, minced red onion, cubed beets – small, and jicama diced – small. Mix together and serve.
